GI (glycemic index) is a measuring index (HIGH or LOW) that ranks/describes the difference between different Carb foods, based on how fast/rapid or how slow/gradual they are broken down by our systems and their consequential effect on the glocose/sugar level in our blood. The goal here by health professionals is the awareness and prevention of
high/sharp fluctuation - Glycemic Roller Coaster in our body by the Sugar- Insulin cycle, due to eating unhealthy foods. Thus reducing the risk of heart disease and diabetes

And what does sharp fluctuation in this case mean?

It means the (quick/sharp), as opposed to, (slow/gradual) RISE and DROPS in the level of our blood sugar

For example
If Carb A is a type of Carb that is broken down (digested) owly/gradually, then it has LOW GI index..These are usually the healthy foods..Glucose is released into our blood stream at
A SLOW and
GRADUAL rate.. Our body turns ON the insulin tap and releases insulin at A SLOW and GRADUAL rate.. That's Small fluctuation. That's good for our health..Not too extreme and far less strain on our body

If Carb B is a type of Carb that is broken down(digested) quickly/rapidly, then it has HIGH GI index..These are the "junk" unhealthy foods..Glucose in released into our blood stream at
A FAST and
RAPID rate..Our body turns ON the insulin tap and releases insulin at A FAST and RAPID rate..That's Sharp fluctuation. That's not good for our health..too extreme and too much strain on our body
